I am Mexican and found none of this offensive but very informative. Mexican Indians are considered native Americans because they were native to all of the Americas. There weren't border lines and many native Americans traveled throughout what we now know as Canada, the united states and Mexico freely. I have always respected Staci for the respect she shows our food and culture. I know we don't like it when other cultures try to represent ours, but radical eats does a DAMN good job. The indigenous foods of the Mexican people were almost completely Vegan until the Spanish settled and introduced cattle and poultry.

Avocado leaves don't seem to be available in my vicinity and I don't know anyone with a tree. Will fresh bay leaves work?

Hi There Radicaleats,
In addition to your post I was wondering, Not all weddings have to cost an arm and a leg. For the budget conscious couple, there are cheap wedding venues available which can save a ton of money that can be put to better use elsewhere. Usually the wedding venue is one of the biggest expenses so by cutting down this cost, it's much easier to stay within budget.
Good Job!

Hi Nina, Didn't mean to offend. I do think of Mexicans as Native Americans because they were here first. I was reminded of Pozole after buying a book from the Museum of the Americas in DC. It includes recipes from all of the Americas.
